Orange and Cinnamon Loaf

  • For the Cake
  • 125g self raising flour
  • 125g golden caster sugar
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 175g unsalted butter, softened
  • 4 large eggs
  • Zest of 2 oranges
  • 20g chopped hazelnuts
  • For the Decoration
  • Nutella or hazelnut spread
  • Chopped hazelnuts to sprinkle

I find loaf cakes are a great mid-afternoon snack. A perfect accompaniment to a cup of tea or coffee. Here is a recipe for an easy and quick loaf cake with a touch of orange which goes beautifully with the sweet and spicy cinnamon which is then topped with hazelnuts. All of this gives it a very classic festive feel.

1. Preheat the oven to 180°C. Butter a loaf tin and line it with baking parchment.

2. Put all the cake ingredients except the hazelnuts in a large mixing bowl. Whisk with an electric whisk until light and creamy. This might take up to two minutes.

3. Now pour this mixture into the prepared tin. Sprinkle the hazelnuts on top and bake for 40 to 45 minutes till done.

4. Leave it to cool in the tin. Once cool remove from the tin and spread some Nutella or hazelnut spread on top of the cake and sprinkle some chopped hazelnuts to finish.
