Ingredients

  • 3.5kg oxtail meat
  • 1 tbsp sugar
  • 1 tbsp salt
  • 3 tsp garlic powder
  • 500g onions, minced
  • 1 tsp allspice
  • 2 tsp liquid browning (soy sauce can be substituted)
  • 1 bunch spring onions, finely chopped
  • 2 tomatoes, diced
  • 85ml soy sauce
  • 60ml tomato ketchup
  • 2 tins butter beans, drained
  • Cornflour mixed with cold water, if necessary

Method

How to make Oxtail stew

1) Put all of the ingredients, except the beans and cornflour, into a 10L to 13L pan. Fill with enough water to cover everything.

2) Bring to a boil, then reduce the heat to medium or medium-low and cook for 2 hours or until tender.

3) Add the beans and stir in. Thicken with the cornflour, if necessary. Serve hot.
