Pan-seared calamari with spicy marinara over linguine

Ingredients

  • 450g linguine
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 500g calamari, sliced into rings
  • 2 (450g) tins pasta sauce with roasted garlic (recommended: Hunt's)
  • 1/2 tsp crushed red pepper flakes
  • Chopped fresh basil leaves, optional

Method

How to make Pan-seared calamari with spicy marinara over linguine

1) Cook the linguine according to the directions on the packet.

2) Meanwhile, put half the oil into a large frying pan and the other half into a small saucepan. Heat both pans on a medium heat.

3) Divide the minced garlic in half and add half to each pan. Cook for 1 minute.

4) Add the calamari to the frying pan and cook for 2 minutes.

5) Add one jar of pasta sauce and half the crushed red pepper flakes to each pan and bring to a simmer. Simmer for 3-5 minutes, until the calamari is tender.

Reserve the tomato sauce in the saucepan for another meal. Transfer the linguine to a serving platter and spoon the calamari and tomato sauce mix over the top. Garnish with fresh basil leaves, if desired.
