Papaya and soybean salad

Ingredients

  • 2 tbsp grapeseed oil
  • 1 tsp ground coriander
  • 1 tsp ground cardamom
  • 1 tsp fennel seeds
  • 1 tsp brown mustard seeds
  • 10g curry leaves
  • 150g frozen soybeans, thawed
  • 300g papaya, peeled, seeded and cut into large chunks
  • 160g cooked rice (blend basmati with wild rice or any rice)
  • Pinch of salt and pepper
  • 1 tsp lime juice

Method

How to make Papaya and soybean salad

1) Place a small skillet over a medium-high heat and add the oil. Add the spices and toast for 1 minute. Stir in the soybeans and cook for about 3 minutes. Allow to cool.

2) Put the papaya chunks into a salad bowl along with the rice and cooled soybean mixture. Add salt, pepper and lime juice and toss well. Taste and add more salt if needed.
