Papaya chicken
Ingredients
- 2 to 3 tbsp grapeseed oil
- 15 to 25g chopped garlic
- 35 to 55g chopped ginger
- 1 onion, chopped
- 1 tsp fenugreek seeds
- 1 tbsp cumin seeds
- 1 tbsp ground coriander
- 1 tsp paprika
- Pinch of salt and pepper
- 950g chicken breast, boneless and skinless, cut into 2 1/2cm pieces
- 120g natural yoghurt
- 150g papaya chunks
Method
How to make Papaya chicken
1) Place a large skillet over a medium-high heat and add the oil. When it's hot, add the garlic, ginger and onion and saute until onion is softened, about 4 minutess.
2) Add the spices and toast for 10 seconds and then add the chicken. Turn the heat to medium and cook until the chicken is nearly done, about 8 minutes.
3) Add the yoghurt and finish cooking the chicken, about 2 more minutes, then stir in the papaya chunks. Serve with rice or rotis.
