Ingredients

  • 2 to 3 tbsp grapeseed oil
  • 15 to 25g chopped garlic
  • 35 to 55g chopped ginger
  • 1 onion, chopped
  • 1 tsp fenugreek seeds
  • 1 tbsp cumin seeds
  • 1 tbsp ground coriander
  • 1 tsp paprika
  • Pinch of salt and pepper
  • 950g chicken breast, boneless and skinless, cut into 2 1/2cm pieces
  • 120g natural yoghurt
  • 150g papaya chunks

Method

How to make Papaya chicken

1) Place a large skillet over a medium-high heat and add the oil. When it's hot, add the garlic, ginger and onion and saute until onion is softened, about 4 minutess.

2) Add the spices and toast for 10 seconds and then add the chicken. Turn the heat to medium and cook until the chicken is nearly done, about 8 minutes.

3) Add the yoghurt and finish cooking the chicken, about 2 more minutes, then stir in the papaya chunks. Serve with rice or rotis.
