Parmesan and thyme biscuits
Ingredients
- 110g unsalted butter
- 75g grated Parmesan
- 185g plain flour
- 1/4 tsp salt
- 1 tsp chopped fresh thyme leaves
- 1/2 tsp freshly ground black pepper
Method
How to make Parmesan and thyme biscuits
1) Place the butter in the bowl of an electric mixer fitted with a paddle attachment and mix until creamy. Add the Parmesan, flour, salt, thyme and pepper and combine.
2) Place the dough on a lightly floured board and roll into a 30cm long log. Wrap the log in cling film and place in the freezer for 30 minutes to harden. Meanwhile, preheat the oven to 180C/Gas mark 4.
3) Take the log out of the freezer and remove the cling film. Cut the log crosswise into 0.5 to 1cm thick slices and place the slices on a flat baking tray. Bake for 22 minutes.
