Pigs in Blankets Sandwich

  • 1 Kingsmill 50/50 Roll, cut in half
  • 1 tablespoon of mayonnaise
  • Few finely cut slices of cooked red onion
  • 3 (or 4 depending on size) cooked cocktail sausages wrapped in bacon or pancetta (leftover from Christmas lunch)
  • 2 teaspoons of cranberry sauce (homemade or shop bought)
  • Juice of ¼ lemon

Lightly toast the roll under a moderate heat and cool slightly.

Spread the mayonnaise onto both halves of the roll.

Place the pigs in blankets on top of one half of the roll.

Place the onion slices on top of the pigs in blanket.

Loosen the cranberry sauce with the lemon juice and spoon this over the pigs in blankets.

Put the other half slice of roll on top.
