Pineapple mojitos

  • 12 fresh mint leaves
  • 10g granulated sugar
  • 1 lime, quartered
  • Ice cubes
  • 60ml pineapple juice concentrate
  • 120ml white rum
  • 120ml club soda
1) Divide the mint, sugar, and lime wedges among 4 old-fashioned glasses.

2) Using a pestle (from a mortar and pestle) or the end of a wooden spoon, mash the mint, sugar, and lime together. Add some ice to each glass.

3) Divide the pineapple juice concentrate, white rum and club soda between the glasses. Swirl with a sugar cane stick, decorate the glasses with slices of fresh pineapple and serve.
