1. Pre-heat the heat griddle/sandwich toaster.
2. Shred cooked pork and set aside.
3. Put a tablespoon of mayo into bowl. Chop and add chilli to mayo.
4. Add a tablespoon each of cream cheese and cottage cheese to mayo, and mix.
5. Spread onto bread and top with shredded pork.
6. Slice pickled cucumber and place on pork.
7. Assemble sandwich. Toast and serve.
