Pumpkin Bread

  • 3 cups sugar
  • 1 cup vegetable oil
  • 4 eggs, lightly beaten
  • 450g canned unsweetened pumpkin
  • 3 1/2 cups flour
  • 2 tsp salt
  • 2 tsp bicarbonate of soda
  • 1 tsp baking powder
  • 1 tsp nutmeg
  • 1 tsp allspice
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • 2/3 cup water

Serves: 2 loaves

1. Preheat oven to 180°C.

2. Butter and flour two 9x5 loaf pans.

3. Stir together sugar and oil. Stir in the eggs and the pumpkin.

4. Combine dry ingredients in separate bowl. Blend dry ingredients and water into a wet mixture.

5. Divide batter between two loaf pans. Bake for 30 to 40 minutes or until cake tester comes out clean. Let the bread stand for 10 minutes.

6. Remove from pans and cool.
