- 450g pumpkin
- 4 eggs
- 960ml milk
- 15g baking powder
- 3.5g ground nutmeg
- 3.5g ground clove
- 3.5g ground cinnamon
- 14g salt
- 400ml oil
- 450g plain flour
- 450g flour
- 30g baking powder
Method
How to make Pumpkin pancakes
1) Add the sugar, pumpkin, eggs and milk to a large bowl. Mix well, then slowly whisk in the oil until completely incorporated.
2) Mix the plain flour, cake flour baking powder, spices and salt together in a large bowl. Add the flour mixture to the pumpkin mixture and whisk until combined.
3) Heat a large frying pan over a medium-low heat. Add the desired amount of batter to the pan and cook until bubbles appear on top of the pancake. Turn the pancake over and cook on the other side. Remove from the pan and keep warm.
4) Repeat with the remaining batter. Arrange the pancakes on a serving platter and serve with a garnish of your choice.
