Ingredients

  • 3 tbsp sugar
  • 250ml Spanish brandy
  • 250ml dry red wine
  • Peel of 1 small lemon
  • 1/2 an apple, peeled, cored and cut in 4 wedges
  • 2 tsp coffee beans

Method

How to make Queimada

1) In a heavy skillet, dissolve the sugar in 1 tbsp water. Cook until the sugar caramelizes to golden. Add the brandy and stir.

2) In a separate saucepan, heat the wine.

3) Transfer the caramel/brandy mixture to a flameproof container and add the lemon peel, apple and coffee beans. Ignite the mixture with a match.

4) After a couple of minutes, put the flames out with the warmed red wine. Serve in small glasses.
