Quick marinara
Ingredients
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 2 (800g) cans whole tomatoes, drained and coarsely chopped
- 3 tbsp tomato puree
- 1 tsp dried oregano
- 1 bay leaf
- 6 basil leaves, coarsely chopped or torn
- Salt and freshly ground pepper
Method
How to make Quick marinara
1) In a large saucepan heat the oil over a medium heat. Add the garlic and cook until golden brown, about 1 minute.
2) Chop the tomatoes; an easy way to do this is to cut them up with scissors while they are in the tin.
3) Add the chopped tomatoes, tomato puree, oregano and bay leaf to the pan. and cook, uncovered, stirring occasionally, until thickened, about 30 minutes.
4) Stir in the basil and season with salt and pepper. If not using immediately, store covered in the refrigerator for up to 3 days, or freeze for up to 2 months.
