Quick pickled onions and apples

Ingredients

  • 2 green apples
  • 1/2 lemon
  • 1 small to medium red onion, very thinly sliced
  • 1 small handful chopped dill
  • 1 tsp salt
  • 70g granulated sugar
  • 300ml cider vinegar
  • 4 fresh bay leaves
  • 1/2 tsp whole black peppercorns

How to make Quick pickled onions and apples

1) Quarter the apples then cut away the core and slice thinly. Put the apple slices in a medium bowl, douse them with a little lemon juice and add the onions and dill.

2) Put the vinegar, bay leaves, peppercorns, salt and granulated sugar in a small saucepan over a medium heat. Stir until the granulated sugar has completely dissolved.

3) Pour the sauce evenly over the apples and leave to stand for 20 minutes, turning occasionally. Serve immediately, or cover and refrigerate until ready to use.
