Quick tomato sauce

  • 1 (790g) tin chopped tomatoes
  • 2 cloves garlic, pressed
  • 55ml extra-virgin olive oil
  • 1 tsp sugar
  • 1/4 tsp salt
  • 2 tsp dried oregano
1) In a medium bowl, combine all ingredients and leave to sit for about 20 minutes to allow the flavours to meld.

2) The sauce can be made ahead of time and kept covered in the refrigerator for up to 3 days or frozen for up to 3 months.
