  • 4L cold water
  • 75g freshly chopped clams
  • 225g butter
  • 4 bay leaves
  • 1 1/2 tbsp salt
  • 1/2 tbsp black pepper
  • 3 tbsp clam base
  • 20g chopped onions
  • 600g cubed potatoes
  • Sour cream, for serving

Method

How to make Rhode Island chowder

1) Into a large pan put the water, clams, butter, bay leaves, salt, pepper, clam base and chopped onions and bring to a boil.

2) Add the potatoes and cook until tender. If a creamy chowder is desired, when serving add a dollop of sour cream to each serving.
