Ingredients
- 350g cooked roast beef, sliced
- 1 tablespoon lemon juice
- 5 tablespoons chilli oil
- 2 medium green chillies, deseeded and bruised in a pestle and mortar
- 2 star anise
- 2 star anise
- 1/2 teaspoon fennel seeds
- 1/2 teaspoon cloves
- 4 dried red chillies
- 1 tablespoon groundnut oil
- A few pinches of sea salt
Method
How to make Roast beef in four-spiced chilli oil
1. Arrange the sliced beef on two serving plates.
2. Heat a wok over a high heat and add the groundnut oil. When the oil starts to smoke, add the dried chillies, cloves, fennel, star anise and Sichuan peppercorns, and stir-fry for a few seconds. Add the green chillies and stir-fry for a few seconds, then add the chilli oil and lemon juice and season with salt.
3. Pour the hot oil over the beef slices and serve immediately.
