Roast beef in four-spiced chilli oil

Ingredients

  • 350g cooked roast beef, sliced
  • 1 tablespoon lemon juice
  • 5 tablespoons chilli oil
  • 2 medium green chillies, deseeded and bruised in a pestle and mortar
  • 2 star anise
  • 2 star anise
  • 1/2 teaspoon fennel seeds
  • 1/2 teaspoon cloves
  • 4 dried red chillies
  • 1 tablespoon groundnut oil
  • A few pinches of sea salt

Method

How to make Roast beef in four-spiced chilli oil

1. Arrange the sliced beef on two serving plates.

2. Heat a wok over a high heat and add the groundnut oil. When the oil starts to smoke, add the dried chillies, cloves, fennel, star anise and Sichuan peppercorns, and stir-fry for a few seconds. Add the green chillies and stir-fry for a few seconds, then add the chilli oil and lemon juice and season with salt.

3. Pour the hot oil over the beef slices and serve immediately.
