1) Put the ice in the blender. Add the cooled grilled pineapple, pineapple juice, sorbet and ice cream. Pulse until the mixture is smooth and creamy.
Pour into four large wine glasses. Top each glass with a splash of soda water. Serve.
Grilled golden pineapple:
Heat the grill to high. Brush the pineapple with some oil and grill until golden brown on all sides.
