- 1 sugar pumpkin

- 50g porridge oats
- 50g brown sugar
- 2 tbsp baking powder
- 1 1/2 tsp bicarbonate of soda
- Pinch salt
- 4 eggs, lightly beaten
- 600ml buttermilk
- 125g roasted pumpkin puree, may use tinned pumpkin
- 2 tbsp rapeseed oil
- 1 tbsp vanilla essence
- 1/2 tsp ground cinnamon, ginger or allspice (optional)

How to make Roasted pumpkin oatmeal pancakes
1) Preheat the oven to 200C/Gas 6. Cut the sugar pumpkin in half and scoop out the seeds and membrane with a spoon. Cook's Note: I use an ice cream scoop or ladle to gently place the pancakes on the griddle, saving enough space between them to allow them to spread without merging. I do not add any of the traditional pumpkin pie spices to the batter because I prefer the light taste of the fresh pumpkin and oatmeal, but be creative and play with spices to suit your own taste.
