2) In small bowl whisk together the cornflour and water, then whisk this into the hot mixture. Turn the heat to low and simmer until reduced by half.
For the prawns:
1) Place the butter and oil in a medium saute pan. When butter the is melted, add the onions and peppers. Cook until translucent but not to achieve colour.
2) Add the apple, garlic and prawns, and cook until the prawns turn pink. Toss with the paprika and glaze.
3) Garnish with fresh mint and serve.
