Mashed potatoes with sour cream and chives

Fresh sour cream, vibrant chives and creamy mash - heaven on a plate.
  • 625g gold-fleshed potatoes (4 medium) unpeeled, cut into 2 1/2-cm pieces
  • 60ml low-sodium chicken stock, warmed
  • 60ml reduced fat sour cream
  • 1 1/2 tbsps chopped fresh chives
  • Salt
  • Freshly ground black pepper
1) Place the potatoes in a steamer basket fitted over a large pan of boiling water. Cover and steam for about 15 minutes, or until the potatoes are tender.

2) Transfer the potatoes to a large bowl. Add the stock and coarsely mash everything together. Stir in the sour cream and chives, season to taste with salt and pepper and serve hot.
