2) Serve over ice in a rocks glass and pour mezcal on top; do not stir the mezcal into the drink, as it should float on top.
For the simple syrup:
1) Combine the ingredients in a small saucepan. Bring to a boil and cook until the sugar is dissolved.
2) Remove from the heat and cool. The syrup can be stored in the refrigerator for up to a month.
