2) In a large saucepan, melt 30g of the butter over a medium-low heat. Add the onions and cook, stirring frequently, for 20 minutes or until the onions are caramelised. Remove from the heat and set aside.
3) In a small bowl, combine the remaining butter and Gorgonzola cheese. Cover and refrigerate until ready to use.
4) Sprinkle the fillets evenly with salt and pepper. Griddle the fillets, covered with the griddle lid, for 4-6 minutes on each side, or until done as desired. Transfer to serving plates and allow to sit for 5 minutes.
Serve the fillets with the caramelised onions and Gorgonzola butter.
Cook's note: For a rare steak, cook it on each side for 3-4 minutes.
