Spiced Red Cabbage

  • 1 red cabbage, finely shredded
  • 2 tbsp olive oil
  • 3 tbsp brown sugar
  • 4 tbsp balsamic vinegar
  • 1 cinnamon stick
  • 2 cloves
  • 1 star anise
  • 2 cooking apples, peeled and chopped
  • Peel and juice of 1 orange

Heat a large pan, that has a lid, over a high heat. Add the oil followed by the cabbage and cook for 5 minutes before stirring in the sugar and vinegar.

Add the cinnamon stick, cloves and star anise, along with the apples, orange peel and juice. Stir well then cover and cook on a low heat for 2 hours stirring occasionally. Once cooked, season with salt and pepper.
