Ingredients

  • 1 tbsp groundnut or sunflower oil
  • 3 garlic cloves, minced

  • 1 piece of ginger
  • 2 spring onions
  • 30g mangetout
  • 1/2 tsp star anise
  • 20g shitake mushrooms
  • Splash of nam pla
  • 1 tbsp coriander
  • 50g pak choy
  • Splash of soy sauce

How to make Stir fried chicken with Asian greens

1) Heat some oil in a high sided frying pan or wok and add the garlic, chicken and a little chilli. As the chicken is cooking add the ginger, spring onion, mangetout and star anise followed after 1 min by the shiitake mushrooms and the splash of nam pla and coriander. Add pak choy and continue cooking until the pak choy has wilted, about 5 mins. Finish with soy sauce, serve.
