Tabouli
Ingredients
- 250ml water
- 150g cracked wheat
- 30g minced fresh parsley leaves
- 15g minced fresh mint leaves
- 75g finely chopped yellow onion
- 3 tomatoes, diced
- 2 cucumbers, seeded and diced
- 3 tbsp olive oil
- 3 tbsp lemon juice, or to taste
- 1 tsp sea salt
Method
How to make Tabouli
1) In a large mixing bowl, pour the water over the cracked wheat and cover. Leave to stand about 20 minutes until wheat is tender and the water is absorbed.
2) Add the parsley, mint, onion, tomatoes and cucumber toss with the wheat mix.
3) Combine the oil, lemon juice and salt in a separate bowl. Add to the wheat mixture and mix well. Serve chilled.
