Ingredients

  • 110g good mayonnaise
  • 2 tbsp small-diced gherkin or cornichons
  • 1 tbsp Champagne or white wine vinegar
  • 1 tbsp capers
  • 1 tsp coarse-grained mustard
  • Pinch coarse salt
  • Pinch freshly ground black pepper

Method

How to make Tartare sauce

1) Place all the ingredients in a food processor or mini chopper fitted with a steel blade and pulse several times until the gherkins are finely chopped and all the ingredients are well mixed but not pureed.

2) Chill before serving.
