Tartare sauce
Ingredients
- 110g good mayonnaise
- 2 tbsp small-diced gherkin or cornichons
- 1 tbsp Champagne or white wine vinegar
- 1 tbsp capers
- 1 tsp coarse-grained mustard
- Pinch coarse salt
- Pinch freshly ground black pepper

How to make Tartare sauce
1) Place all the ingredients in a food processor or mini chopper fitted with a steel blade and pulse several times until the gherkins are finely chopped and all the ingredients are well mixed but not pureed.
2) Chill before serving.
