Ingredients
- 2 cups ice
- 45ml tequila
- 20ml Triple Sec
- 90ml cranberry juice
- 90ml pineapple juice
- 30ml fresh lime juice
- 30ml chipotle simple syrup, recipe follows, optional
For the chipotle simple syrup:
- 480ml water
- 225g sugar
- 3 dry chipotles
Method
How to make The Barrer at Ruth Lake
1) In a mixing glass, add the ice, tequila, Triple Sec, cranberry, pineapple and lime juices, and the chipotle syrup.
2) Shake and pour into a tall glass on the rocks or in two martini glasses.
Chipotle syrup:
1) In a medium saucepan, bring all the ingredients to a boil. Turn off the heat and leave to steep for 5 minutes.
2) Strain and cool before using.
