The Barrer at Ruth Lake

  • 2 cups ice
  • 45ml tequila
  • 20ml Triple Sec
  • 90ml cranberry juice
  • 90ml pineapple juice
  • 30ml fresh lime juice
  • 30ml chipotle simple syrup, recipe follows, optional
  • For the chipotle simple syrup
  • 480ml water
  • 225g sugar
  • 3 dry chipotles
1) In a mixing glass, add the ice, tequila, Triple Sec, cranberry, pineapple and lime juices, and the chipotle syrup.

2) Shake and pour into a tall glass on the rocks or in two martini glasses.

Chipotle syrup:
1) In a medium saucepan, bring all the ingredients to a boil. Turn off the heat and leave to steep for 5 minutes.

2) Strain and cool before using.
