Ingredients
For the peanut puree:
- 100g roasted unsalted peanuts
- 3 tbsps groundnut oil
For the bread:
- 2 eggs, beaten
- 1 tsp vanilla essence
- 50ml double cream
- 8 slices banana bread
- 15g unsalted butter
For the bananas:
- 2 ripe bananas
- 70g panko (Japanese) breadcrumbs
- 3 tbsps groundnut oil
- 4 tsps honey
Method
How to make The Elvis Presley
Peanut puree:
Place the peanuts and 3 tablespoons of groundnut oil in a small saute pan and heat for 3 minutes at low heat. Transfer to a blender and puree until smooth.
Bread:
1) Mix eggs, vanilla and double cream together in a bowl. Dip banana bread into the mixture.
2) Melt butter in a non-stick pan and cook banana bread for 2 minutes on each side or until golden brown. Place bread on a paper towel and reserve.
Bananas:
1) Cut bananas into quarters and dip into the same egg mixture as above, then roll the bananas in the breadcrumbs until well covered.
2) In a non-stick pan, heat 3 tablespoons of groundnut oil until nearly smoking and fry bananas until golden brown, remove from oil and place on a paper towel as well.
Assembly:
Spread both sides of banana bread with peanut puree and layer with the fried bananas. Drizzle with 1 teaspoon of honey.
Close the sandwich, slice and serve.
