2) To make the glaze, heat the oil in a frying pan and saute the onions, garlic and jalapenos until translucent. Add the orange marmalade, mustard powder, white pepper and chilli powder and cook for approximately 2 minutes.
3) Griddle the turkey burgers first on a very high heat until nice markings are shown, and then reduce the flame to approximately medium. Cook the burgers until well done (75C on an instant-read meat thermometer) but not overly done.
4) As the burgers finish cooking, griddle the hamburger buns on both sides. Serve the hamburger on an open bun with glaze on one side and garnishes of choice on the other. Guten appetit!
