Preheat the oven to 180°C (160°C with fan) gas mark 4.
Place the sausages into an ovenproof dish and sprinkle over the sliced red onion. Bake for 20 minutes till golden.
Sieve the flour into a mixing bowl, make a well in the middle and crack the eggs into the well. Slowly whisk the eggs, incorporating the flour. Pour in the evaporated milk gradually and whisk until it resembles a smooth batter.
When the sausages are cooked, remove the dish from the oven and pour over the batter. Bake for another 20 minutes until the batter mix is cooked and golden brown.
