1) Make the Chilled tomato and pepper soup.
2) Meanwhile, remove the eyes from the tomatoes where they were attached to the stalk and score a cross in the skin at the opposite ends. Place in boiling water for 10 seconds before plunging into iced water. The skin should peel away easily. Peel, quarter and chop.
3) Peel the cucumber, cut into quarters lengthways and take out the seeds. Cut into 1cm dice. Slice the olives into ovals.
4)To serve, pour the consomme into bowls, garnish with the tomatoes, cucumber, olives and basil and finish with a drizzle of extra-virgin olive oil.
