Tomato, Pineapple and Watermelon Bloody Mary

  • 5 ripe plum tomatoes
  • 1-2 stick celery (leaves removed for garnish)
  • 1 stalk lemongrass, finely cut
  • 1/4 pineapple, skin and eyes removed
  • 1 piece of watermelon, roughly the same amount as the pineapple, skinned and deseeded
  • 1 passionfruit
  • Dash of tomato juice
  • A few basil leaves
  • Sherry vinegar
  • Worcestershire sauce
  • Frozen vodka to taste

Blacken the tomatoes, celery and pineapple on the BBQ. Add these to the remaining ingredients apart from the sherry vinegar, Worcestershire sauce and vodka. Season well (you can now leave this overnight in the fridge to mature if you wish).

Blitz and season to taste with sherry vinegar, Worcestershire sauce and the vodka.

Serve with the celery leaves to garnish.
