Tropical muddle puddle

  • 3 (5cm by 5cm) pieces fresh pineapple, plus more for garnish
  • 4 (0.5cm thick) orange slices, plus more for garnish
  • Ice
  • 60ml coconut banana rum, such as Malibu
  • 120ml sweet and sour mix
  • 60ml lemon-lime soda
  • 30ml dark rum
1) In a large pint glass, muddle the pineapple and orange. Fill the glass full of ice, then add the coconut banana rum, sweet and sour mix and splash of lemon-lime soda.

2) Float the dark rum on the top. Garnish with a wedge of pineapple and orange.
