Turkey sweet potato Shepherd's pie

Ingredients

  • 2 tbsp extra-virgin olive oil
  • 900g ground turkey or chopped leftover turkey
  • Salt and freshly ground black pepper
  • 2 tsp poultry seasoning
  • 1.1kg sweet potatoes, peeled and cubed
  • 1 onion, cut into 2.5-cm dice
  • 2 carrots, peeled and grated
  • 4 ribs celery, chopped
  • 4 tbsp butter, divided
  • 2 tbsp plain flour
  • (recommended: Kitchen Basics)
  • A few dashes Worcestershire sauce
  • 280g frozen peas
  • 1 very ripe banana
  • A few dashes hot sauce
  • 200g mature shredded yellow Cheddar

How to make Turkey sweet potato Shepherd's pie

1) Preheat oven to 220C/Gas 8.

2) In a deep skillet or a Dutch oven heat 2 tablespoons oil over high heat. Add meat and break up with a wooden spoon, season with salt and pepper and poultry seasoning.

3) Place sweet potatoes in a pot, cover with water, cover pot, bring to a boil, add salt and cook 15 minutes until tender.

4) Add onions, carrots and celery into the turkey. Stir, and cook for 5 minutes. While vegetables are cooking, heat 2 tablespoons butter in a small pot over medium heat. Add flour to melted butter and whisk 1 minute. Whisk in stock and season with salt, pepper and Worcestershire. Cook a few minutes to thicken.
Stir peas into meat and turn heat off.

5) Drain potatoes and return pot to heat. Add remaining 2 tablespoons of butter and melt over medium heat. Peel and slice banana and add potatoes to the pot. Season the potatoes with salt and pepper and a few dashes hot sauce. Mash potatoes and banana to combine, adjust seasoning. Top the meat with the potatoes. Cover potatoes with cheese and place in the oven to melt cheese, about 5 minutes.

This recipe sounds disgusting, to sweet, to high in fat, to many ingredients. Simplify and pay more attention to calories and fat content. Think of the obesity epidemic thats happening in the western countries not to mention the high incidence of heart disease. I'm having to adjust every recipe for a friend who recently had a major heart attack and is having to learn to cook from scratch. I have osteo arthritis and cannot stand for long periods of time so like recipes that are quick to prepare and also have to watch calories to stop my weight climbing due to lack of mobility. I tapped on British/easy to try and find something I would not have to rewrite, no luck.
