Tzatziki

  • ½ cucumber
  • 125ml Bulgarian or Greek yoghurt
  • 30 ml sour cream, optional
  • Small handful mint, chopped
  • Salt and pepper, to taste
Slice the cucumber in half and scrape out the core with a spoon. Grate the cucumber and then squeeze out any excess moisture before transferring to a bowl. Add the rest of the ingredients and stir to combine. Season to taste.
