  • 1 (450g) tin cannellini beans, drained, rinsed
  • 2 tbsps caster sugar
  • 2L vanilla pod ice cream
  • Finely grated fresh nutmeg

Method

How to make Vanilla bean and cannellini bean ice cream

1) Roughly mash the beans with the caster sugar.

2) Soften tge ice cream slightly in the microwave for several seconds. Transfer the ice cream into a large shallow mixing bowl and work in the mashed beans and few dashes of nutmeg together, as quickly and as evenly as possible.

3) Transfer to the freezer and freeze for at least an hour or preferably overnight.
