To impart the spicy flavor of this dish, Bobby uses a Mexican chilli - the chipotle - a smoked-dried jalapeño which is very spicy. By using the tropical fruits found in this region, combined with sugar and water, resulting in a syrup - and adding chipotle to the mixture, Bobby has created an interesting dessert which is both sweet and spicy at the same moment with a smoked touch to it.
Heat up the water and add sugar, stir the mixture until the sugar is dissolved in the water.
Add all the chopped fruits in the mixture.
Throw in the chipotles and let the mixture simmer for fifteen minutes before serving.
