Waldorf chicken wraps
Ingredients
- 240g non-fat plain yoghurt or 180g non-fat Greek-style yoghurt
- 2 tbsp mayonnaise
- 1 tbsp lemon juice
- 2 tbsp Dijon Mustard
- 1/4 tsp salt
- 5g finely-chopped thyme
- 450g cooked, skinless chicken breast cut into 1-cm cubes
- 75g seedless grapes, sliced in half
- 35g toasted, coarsely chopped walnuts
- 1 medium apple, cored and diced (about 100g)
- Freshly ground black pepper
- 5 large leaves Cos lettuce, rinsed and patted dry
- 5 whole-meal wraps, about 20-cm in diameter
Method
How to make Waldorf chicken wraps
1) If using regular yoghurt place the yoghurt in a sieve lined with kitchen paper. Put the sieve over a bowl and place in the refrigerator to drain and thicken for 30 minutes.
2) In a small bowl, combine the thickened or Greek-style yoghurt, mayonnaise, lemon juice, mustard, salt and thyme until smooth. Fold in chicken, grapes, walnuts and apples. Season with pepper.
3) Place a lettuce leaf on a wrap. Spoon about 100g of the chicken filling onto wrap and roll wrap around filling.
Slice in half and serve.
