Wicked pork with greens and fettuccine
Ingredients
For the pork:
- 4 cloves garlic, peeled
- 1 (2.5cm) piece fresh ginger, peeled
- 45g seeded and roughly chopped jalapenos
- 130g roughly chopped red pepper
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp freshly squeezed orange juice
- 1/2 fresh pineapple, peeled and cored, roughly chopped
- 1 lime, juiced
- 1 tsp freshly cracked pepper
- 1 tsp salt
- 1/2 tsp Chinese five-spice powder
- 1 (1.6kg to 1.8kg) pork loin
For the greens:
- Reserved marinade from the pork
- 4 tbsp rice wine vinegar
- 2 tbsp lime juice
- 1 tbsp chopped coriander
- 1 tsp chilli flakes
- 120ml extra-virgin olive oil
- 300g sliced baby pak choy (cut lengthwise into fourths)
- 150g cored and thinly sliced green cabbage
- 50g diagonally sliced spring onions
For the pasta:
- 450g fettuccine
- 1 tbsp extra-virgin olive oil
- 1 tbsp soy sauce
Method
How to make Wicked pork with greens and fettuccine
1) To make the marinade for the pork, in a food processor, blend the garlic and ginger by pulsing 3 times. Add in the jalapeno and red bell pepper, pulse 3 times. Add the remaining ingredients except the pork, pulse 3 to 5 times to blend well, but not liquefy.
2) Season, to taste. Remove 340g of the marinade and set aside. Place the pork in a resealable plastic bag and pour the marinade over the top. Refrigerate for at least 1 hour, and up to 4 hours.
3) Preheat the oven to 180C/Gas 4. Remove the pork from the refrigerator while the oven is preheating, drain off excess marinade and discard. Place the pork in a roasting pan fitted with a rack and cook until the internal temperature registers 70C, on an instant-read thermometer, approximately 1 hour and 30 minutes.
4) Meanwhile to make the greens, in a medium, non-reactive bowl, whisk together the reserved marinade, vinegar, lime juice, coriander, chilli flakes and slowly whisk in the oil. Add half the vinaigrette to a large bowl with the pak choy, cabbage and spring onions and toss to combine. Cover and set aside. Reserve the other half of the vinaigrette.
5) Cook the pasta al dente according to the directions on the packet, add in the olive oil and soy, toss to combine. Remove the pork from the oven and leave to rest, covered loosely with foil, for 10 minutes. Slice thin.
6) For the final assembly, arrange the pasta on a large platter and top with sliced pork and prepared vegetables. Drizzle the entire dish with about 70ml of the reserved vinaigrette. Serve immediately.
