Wild-style grains n' thangs
Ingredients
- 480ml vegetable stock
- 1 cup fine-grained bulgur wheat
- 1/2 lemon, zested, juiced
- 1/4 cup slivered almonds, toasted
- 1/4 cup chopped mint leaves
- 1 tsp red pepper flakes
- Salt and freshly ground black pepper
Method
How to make Wild-style grains n' thangs
1) In a medium saucepan, bring the stock to a boil over high heat. Remove from the heat, add the bulgur wheat and lemon zest, cover, and let sit for 5 to 7 minutes, until the bulgur has absorbed all of the water.
2) Transfer to a serving bowl, stir in the almonds, mint, red pepper, lemon juice and salt and pepper, to taste.
Serve warm or at room temperature.
