YJ's fish and banana leaves

  • 2 banana leaves
  • 500g tilapia fillets
  • 2 baby squash, thinly sliced
  • 1 red onion, thinly sliced
  • 1 plantain, thinly sliced
  • Handful olives or sultanas
  • 1 lemon, quartered
  • Olive oil, for drizzling
  • Salt and freshly ground black pepper
  • Bitter orange peels
1) Preheat the oven to 160C/Gas 3. Tear the banana leaves in half.

2) Place 125g of tilapia in the centre of each leaf. Lay the vegetables and olives or sultanas across the top of the fish.

3) Squeeze a quarter of a lemon on each piece. Drizzle with olive oil, season with salt and pepper, to taste, and top with orange peel.

4) Wrap the ingredients in the leaves and bake for 15 to 18 minutes.
